Homemade Croutons Recipe
One of the only saving graces about being on a diet and eating primarily salad for every meal, is if they are adorned with delicious croutons. It's the sneaky way of getting your bread fix while still eating healthy. My love for croutons started as a child - I remember eating them straight out of the box as a snack. However, once you have had them homemade, you won't want them any other way. Here is my favorite version.
Ingredients:
1 loaf bread (I like using a multi grain or whole wheat, but any variety is fine)
1/4 cup olive oil
1/3 cup cornmeal
salt
Directions:
Note: For this little project, I like to venture to the clearance bread aisle at the grocery store. A bread on the slightly stale side is best for a crispy crouton. Fresh bread is okay, it will just be a little softer.
Cut off crusts from bread
Cut bread into small square shaped pieces
Brush each piece of bread with olive oil sprinkled with salt
Dip each olive oil brushed crouton in cornmeal to give it a crunchy coating
Bake at 400 for about 10 minutes, rotating intermittently.
Let cool, add to your favorite salad and enjoy!
