Redskin Mashed Potatoes
There's something about mashed potatoes that just makes me happy! This is probably because it was the only thing I enjoyed eating that my mom would make.. Anyway, I love potatoes in any form, but mashed potatoes are one of the best! Having leftover redskin potatoes on hand, I decided to make redskin mashed potatoes. While with regular potatoes, one would peel the skin off, with these I kept the skins in tact to give it texture and flavor. The addition of garlic while the potatoes are boiling gives the potatoes just a hint of garlic flavor. You can really make these your own, but I find this way to be simply delicious.
Ingredients:
5 redskin potatoes
1 tsp minced garlic
3 tbsp margarine
salt
pepper
Directions:
Wash and cut redskin potatoes in half, leaving skins intact.
Add salt to medium pot of water. Bring to a boil.
Reduce heat to medium/high and potatoes and garlic. Let simmer for 20 minutes or until softened.
Remove water from pot and mash potatoes with fork or potato masher.
Add margarine (or butter) and salt and pepper to taste.
