Strawberry Lemonade Cupcakes
One of my favorite things about the summer is sitting on the porch with a tall glass of lemonade. While sipping on said substance, I was also pondering what to make for my cousin's dinner party. Well, I knew it had to be a cupcake but what flavor?! Suddenly, the idea struck me -Strawberry Lemonade Cupcakes! So here you have it!
Strawberry Cake Recipe
Ingredients:
1 1/2 cups pureed strawberries (about 3/4 pint fresh strawberries with tops cut off)
1/2 cup butter (at room temperature)
1 cup sugar
3/4 cup applesauce
1/4 cup milk (almond, or any variety)
1 1/2 cups flour
1 teaspoon baking powder
1/4 tsp salt
12 drinking straws
Directions:
Preheat oven to 350.
Puree strawberries in food processor
Combine dry ingredients, set aside.
Whip butter until light and fluffy.
Gradually add sugar to whipped butter until combined.
Add applesauce and mix until just combined. (Be careful not to over mix)
Add flour mixture, 1 cup strawberry puree, and milk gradually, starting and ending with flour mixture until batter is formed.
Fill cupcake liners and bake 20-24 minutes or until toothpick inserted in center comes out clean.
Remove from oven and set on wire racks to cool.
Once cupcakes have cooled fill each cupcake with remaining strawberry puree.
Lemon Icing Recipe
Ingredients:
1/2 cup butter (at room temperature)
1 1/2 cups powdered sugar
1/8 tsp salt
3 tbsp lemon juice
1 tsp vanilla extract
3 drops yellow food coloring
Directions:
Whip butter until light and fluffy
Gradually add powdered sugar and salt
Decrease speed and add lemon juice, vanilla extract and food coloring
Whip on high until ingredients are all combined and frosting is light and fluffy
Frost cupcakes with frosting and insert with drinking straw (cut to fit)
