Nutella Banana Muffins


Nutella Banana Muffins

Super ripe bananas lying around in the kitchen?! No need to throw them out! Very ripe bananas are excellent for making banana bread/muffins. One of the best things about banana bread is that it's so versatile and you can add any ingredient of your choice to doctor it up. The recipe below is a basic banana bread recipe, but I added a swirl of Nutella to spice things up a bit. Enjoy - and remember save those bananas! (Recipe makes 1 dozen muffins)

Ingredients: 

2 cups mashed banana (4 very ripe bananas)
1 cup white flour
1 cup whole wheat flour
1 1/2 tsp baking soda
1 cup white sugar
1 cup brown sugar
2 eggs (or egg replacement)
2/3 cup unsweetened applesauce 
1/8 tsp nutmeg
1/4 tsp cinnamon
1/4 tsp vanilla extract
3/4 cup Nutella hazelnut spread

Directions: 

Preheat oven to 325.
Mash bananas until the consistency of baby food
Combine dry ingredients in large bowl
Combine wet ingredients together
Add wet ingredients to dry ingredients
.
Mix until incorporated and a batter is formed.
Line muffin tin with liners and fill each about 3/4 way full.
Add a dollop of Nutella approx 1 tbsp) to each muffin, swirling with a toothpick. 
Bake at 325 for 20-25 minutes
