S'more Cupcakes Recipe
S'mores are pretty much one of my favorite things about life. I even dedicated an entire summer of my life to perfecting and experimenting with the s'more! One of the creations born out of the summer of the s'more was the s'mores cupcake! What could be better than combining two of my greatest loves -cupcakes and s'mores. A graham cracker cake starts things off with a nice foundation, add a Hershey's chocolate in the middle to give it that authentic summertime s'more taste and top it off with some ooey gooey marshmallow buttercream frosting! Delicious!
P.S. Do you know they call them s'mores? Because you always want some more!!
Ingredients:
Cake:
1 box yellow cake mix
1 1/2 cups crushed graham crackers
1 1/2 cups water
1/3 cup applesauce (or oil)
3/4 cup soymilk (or 3 eggs)
1 pkg Hershey's milk chocolate Nuggets
Marshmallow Buttercream Frosting:
1/2 cup butter
2 cups confectioners sugar
1 7 oz jar of marshmallow creme
1/4 tsp vanilla extract
Cake Directions:
Unwrap chocolate Nuggets, set aside.
Finely crush 1/2 sleeve of graham crackers, or enough to produce 1 1/2 cups graham cracker crumbs.
Prepare cake mix as directed on box adding an additional 1/2 cup water (for a healthier version sub applesauce for oil and soy milk for eggs).
Add graham cracker crumbs and blend with cake mix until incorporated.
Beat on high for about 2 minutes.
Line muffin tin and spoon a small amount of batter onto bottom of each.
Place one chocolate nugget in each batter filled liner.
Spoon batter over chocolate nugget, covering completely.
Bake for 20-22 minutes.
Frosting Directions:
Whip 1/2 cup room temperate butter until light and fluffy.
Add jar of marshmallow creme
Gradually add 2 cups of powdered sugar, mix well.
Add 1/4 tsp vanilla extract and whip until fluffy.
Frost each cupcake, and generously cover in chocolate sprinkles. These are sure to be a hit!
